Mitsuri thought Flayn was extraordinarily cute! From the start, she looked at Flayn like a little sister for that eagerness to learn. As a result she was doting and even protective, so she failed to account for Flayn's qualifications as a young woman with education. Mitsuri was quick to accept that she should've given Flayn more credit, given that in the Demon Slayer Corps one of the Pillars isn't even fifteen years old!
At the same time, she also thought that Flayn could stand to speak up a little more. Whatever the reason for not speaking up about feeling well, though, Mitsuri beat herself up more for not noticing that something was wrong, because Flayn didn't deserve that death and Mitsuri couldn't do anything for her. She was distraught for both Flayn and Flayn's wonderful brother, who had unknowingly lost his sister.
So when Flayn came back with everyone else, Mitsuri was overjoyed. Flayn was such a good kid that the ritual didn't suit her at all. That she felt terrible about what went down with Dimitri and the other Pillars was just testament to her big heart in Mitsuri's mind, and Mitsuri never held that event against her.
Overall Mitsuri loved Flayn a lot and hopes that she reunited with Seteth in the end! Which. Kind of happened, but.

Mitsuri always liked Giyu, but she saw him as a distant figure who would struggle to get along with others. He was also her senior, so she couldn't act as familiarly with him as she would with Shinobu. She worried about him just as much, though, and she more or less let him be, because he seemed to have everything under control on his end. Given her odd lack of memories, she suspected that there were background conversations going on to which wasn't privy, and she was okay with that: She trusted both Giyu and Shinobu more than anyone else.
The day he came to her first, she was really tickled! Maybe he actually wanted to build a rapport with her. That's part of the reason why she was able to offer food at the very end. At the same time, she carried a lot of guilt where Giyu was concerned, partly for the reason that he was shouldering more than most by playing executioner and, which she learned later on, that he'd been the ritual's mastermind of sorts. Being quiet wasn't tantamount to feeling nothing.
Rewinding a bit, that discussion fronted by Dimitri and Threepio got Mitsuri thinking about how suspicious Giyu actually kind of was, particularly after Shinobu got involved in that shifty conversation with Kasane. But Mitsuri didn't want to upset any plan Shinobu and Giyu might have had in the works, so that was a major contributor as to why she didn't intervene at all the following day. Turned out that there probably was no plan—just a lot of raw emotions—and she felt terrible, but ultimately relieved that everyone managed to come back.
Giyu was forced to shoulder a lot. Mitsuri felt deeply for him and, regardless of the bloody turn so many people made, she was thankful for everyone's efforts. Naturally, that included him. No matter how much the island had sunken its fangs into him, she believed that his efforts (or at least sentiments) to keep them safe were genuine.

Mitsuri adored Yin Yu! Fun fact: Giyu's mentor wore a mask, because demons kept making fun of his kind face. Masks exist to hide one's face, but the reason isn't always nefarious. On Mitsuri's end, she thought the mask was a very cool touch for a rather mysterious man.
From the start, Yin Yu was cooperative, soft-spoken, and mindful. Although Mitsuri didn't get to know too many personalities in the other camps, she definitely appreciated those in her own Waterfall Camp. Yin Yu's circumstances eluded her understanding for the most part, but she at least understood that he was an extraordinary individual for all his modest claims. The fact that he had such an ordinary face in contrast made him that much more charming in her eyes.
Most of all, he was always focused on helping out in the background. He was thorough and observant. The islanders were lucky to have someone like him on board! But Mitsuri valued his heart the most, because he was an attentive listener with kind words to impart in return. He even indulged her curiosity and praised her work ethic—like, dang, she wasn't even tooting her own horn but those of others at the time. He was so very nice to her, even when she collapsed during the messy execution. She was too focused on Shinobu then, but you can bet your bottom that she was extremely grateful for his consideration of her in the moment.
